The cock's comb was part of a different dinner the night before, part of a multi-part dish involving John Dory, entirely crisped wafer-like chicken skin, and the cock's comb - poached perhaps? It was a tender slightly wobbly little thing, golden, texture like a cooked mushroom, and taste like the ghost of organ meat intensity. It never occurred to me that that was an edible part of the bird either!
