C. and I are roasting a turkey for the first time tomorrow, in honor of Canadian Thanksgiving. In order to keep tomorrow's cleaning-frenzy under more control, we cooked squash, stuffing, and giblet gravy tonight. I had no idea that real gravy was so easy to produce! We've gone through a great deal of onion, sage, celery, carrot, parsley, and thyme: all the secondary flavors of Thanksgiving.

I ate, I cooked, I shopped, I napped, and I had a wonderful night last night at the Canadian Salsa Congress (about which I will write more anon). I made applesauce soup. And the weekend passed by.

When I was in York for the year, a Canadian hosted American Thanksgiving for us Americans who were pining away for it. She hadn't done anything for Canadian Thanksgiving, and so was particularly happy to coordinate with our desires for turkey and stuffing. That was the first time I ate parsnips, I think. I was pleasantly surprised.
