In the UK, National Mills Weekend is next weekend, Saturday and Sunday, May 12-13th. SPAB Mills Section has posted a list of participating mills, many of which will be grinding their own flour during the open days. I can't go this year, but perhaps you can!

REminds me of something that happened when I was studying archaeology. There was an ad saying "Everybody knows stone-ground flour is healthier." What I heard is that every archaeologist in the country screamed blue bloody murder. What I know happened is that the ad was dropped abruptly and replaced some weeks later by one saying "Everybody knows stone-ground flour tastes better."

One of the beest ways of estimating the age of pre-industrial skeletons isby seeing how far down their teeth had been worn by the grit in the bread they ate, and one of the really common causes of death was abscesses resulting from teeth being worn down to the pulp cavity!

I am regularly grateful that I grew up with fluoridated water in addition to grit-free flour. There's a reason why millstones wear down over years of use.
