Perhaps because it used to be much more common for people to wear brooches/boutonnieres on their lapels? Wearing a poppy is a clear sign, but is still relatively subtle and in keeping with the solemnity of the event.

I can credit most people with subtlety and solemnity, but there will surely always be those who believe that more ostentatious is showing off how much more solemn and commemorative they are. But I am being pessimistic without specific Rememberance Day evidence, for I've never thought to go looking on this account before.

Maybe. But there seems to be (present US administration excepted) a general agreement on how one treats the war dead, as opposed to anyone else. That's just my impression, of course.
