Helen Waddell's Medieval Latin Lyrics has a selection from late-classical (Ausonius, Boethius) to 11th-century-ish (Peter Abelard), including several selections from the Carmina Burana. Each poem appears in Latin and English translation.

Which are really so much better when not set to big, portentous orchestral music.
