Today's culinary challenge: how to make a savory bread-like substance with no milk or eggs in the house.

Solution, upon extensive browsing of the Joy of Cooking: Johnnycakes, made from friend corn meal and water. They made for quite a good lunch, with sour cream and C.'s One-of-a-kind Show salsa.

You would need eggs and probably milk for this, but I must share my friend Anna's delicious cornbread recipe with you.
Prepare cornbread batter as you normally would (I prefer a cakier version), and add a can of corn (drained) and as much pepper jack cheese cut into cubes as you want. It is really yummy and has a kind of pudding-y quality to it.
